“Every Last Morsel”, illustration for Four seasons magazine. Smell and taste are experiences we identify with our nose and mouth, but they actually have more to do with our brain. Cacao, for example, contains more than 600 aroma and flavour compounds; sweetened chocolate includes additional scents, like peaches. But if we consume them too quickly or without attention, we miss the delicious complexities.
